Being pregnant I’ve found myself hungry at random times throughout the day (and especially at night this time around). Having healthy prepared snacks ready to eat has been key to helping me stay on track with my diet (and not just reach for the ice cream although that would be awesome!). I’ve always been a big fan of hummus and may even have been known to eat it straight from the tub with a spoon, but I wanted to share a few quick and easy snacks that I’ve been munching on lately.
If you’re a lover of hummus like me, you’ll be excited to know that there’s now an even lower-calorie option available from Skinnygirl! Previously known for their low-calorie cocktails, Skinnygirl has now expanded to also provide healthy and fresh party options like hummus, dips, and salsas. I tried out the Skinnygirl Roasted Red Pepper Hummus and was so impressed with the creamy texture and rich flavor. Skinnygirl Hummus is actually mixed with a touch of nonfat Greek yogurt, resulting in lower-calories and even increasing its nutritional profile in my opinion as it now offers probiotic cultures. I usually have a mix of 1-2 different hummus snacks prepped in my fridge and they’re so super easy to make:

Hummus-Stuffed Mushrooms: Pre-heat oven to 375 F. Wash a pack of baby portobello mushrooms (these are small mushrooms about 2″ in diameter) and remove the inside stem. Sprinkle a little salt on the mushrooms and then load each of them up with about a tablespoon of hummus. Line a cookie sheet with parchment paper or a silicone mat and gently place the mushrooms on top. Cook for 20-25 minutes.

Red Pepper + Hummus Cucumber Slices: Slice up a cucumber into 1/8″ thick slices and a red bell pepper into small cubes. Using a spatula, spread hummus on top of each cucumber slice and then top with the red pepper.

Cucumbers + Hummus Dip: This one is pretty self explanatory. Just slice up the cucumber and proceed to dip!
